I plugged in several drives all were NTFS and told program create and save offline a complete index of Everything. I thought that I has Everything indexed but it appears that I missed the part to try to get sub folders indexed as well
I'm guessing that this can be done but how? And can I assume that I get that up and running It could even further down the tree if it happened to exist?

Everything should be indexing all sub folders on NTFS volumes.
Are these sub folders junctions? -Everything does not follow folder junctions with NTFS indexing.
Are you excluding hidden or system files from Tools -> Options -> Exclude?
Please make sure no search options are checked under the Search menu (eg: uncheck match case, uncheck match whole words, uncheck regex)
Please make sure the Everything filter is active under the Search menu.

- In Everything, from the Tools menu, click Options.
- Click the Indexes tab on the left.
- Click Force Rebuild.
- Click OK.
