Suggestion, make an option to reset categories
It happens easily to forget to reset the category to "Everything" between usages. So it would be nice to have an option to set it back to the standard category every time Search Everything is used.

There is. You can configure the "Home" settings under Menu:Tools > Option > General > Home
These settings are used for each new Everything window or when you press 'ALT+HOME'
This is what my Home settings look like. The settings in the orange rectangles are the one most useful to reset.
TIP: Check the right side of the status bar. Settings that influence the results are shown here.
Double-clicking each resets them. Right-click for more options.
