This may be a long shot, but one of my drives died and everything 1.5 is the only thing currently with a list of the files on there. I have not opened the app since, since I have the "automatically remove offline volumes" option checked and I know it will be removed if I open the app.
Is there any chance I can change this setting outside of Everything so that I may open the app and see the files that were on this forever-offline drive?

Sorry to hear about the drive dying.
Please make a backup of your %LOCALAPPDATA%\Everything\Everything.db
Run Everything64.exe with the -read-only command line option:
Everything64.exe -read-only
From there you can search for your dead drive (eg: d: ) and export the results to a file list from File -> Export.
