Hallo,
I want to create a filter. With this I want to create a history list of a specific folder (with text files) i.e. You want to see which file of this folder was created when, when it was changed and when the last access was.
Can I also specify in this filter which columns are displayed with this filter and if so, how?
I am using version 1.4.

Looking at filter or bookmark creation in 1.4, neither has an ability to select columns. However, the ability to select columns for filters or bookmarks can be found in 1.5a (I'm currently using 1.5.0.1272a).
In 1.5.0.1272a:
For example, a filter: and the filter in use: or a bookmark: What kind of search and other options, including columns, sort or view, you want for a filter or a bookmark depends on you. The above is just a simple example to filter *.txt files in a specific path or add a bookmark to the search. If you want to add columns to your filter or a bookmark then I'd recommend trying version 1.5a.

I am pleased that my project is possible with version 1.5.
Of course, it would be better if it were also possible with version 1.4, but with version 1.5 is also an acceptable solution.

Sorry but of course new features are added to new versions and not ported back to old versions
in almost every software I know.

I only said that its not normal to get features back ported
after Mizufluffy told you that this is a new feature in version 1.5

Version 1.5 is still in it's alpha stage, but it is remarkably mature already (I only use 1.4 to answer forum questions; the rest is 1.5).
And if something is missing or needs improvement, that gets added or fixed very fast.
Column selection in filters is one of the many, many new features in version 1.5. It is well worth exploring.
There is even an columns: function to specify the columns you want as part of your search
However, if you work in an organization that doesn't allow alpha or beta version of software, you will have to wait until Everything 1.5 is out of beta.
There are some alternatives/workarounds using Everything 1.4, but none as intuitive and integrated as the one mentioned by @Mizufluffy.
