Hi,
Settings are saved only when you close/exit Everything properly.

after restart of the system
Is that that the only time?
As in if you make a change, Tools | Options, that should write to disk immediately.
And you've verified that everything.ini is then dated currently?
And if you look through the file (but don't modify), you can find the pref that you changed & can "see" that has in fact changed?
And you've looked to see if you might not have various Everything.ini about?
And that your desktop shortcut (or however you open Everything) is pointing to where you're expecting to be running Everything from?
And that your setting to save Everything.ini is as expected from within the program itself?

Does this occur often?

I've had another user experience the same thing and we found the Everything.ini was being zeroed (fill with nulls) between exiting Everything and restarting Windows. I have not figured out why yet, I've made a version of Everything to test it wrote the Everything.ini successfully and complain if the ini is bad in any way. The issue always occur after Everything had exited.

One workaround is to setup Everything to your liking and then set the Everything.ini to read-only, this will prevent most changes to this settings file.

Your Everything.ini which stores all your settings, should be stored in %APPDATA%\Everything

If you find Everything has lost your settings again, please:

It looks like I could solve the issue... But don't ask me how... see below what I did.
But first a question about GUI: I'm using the german language. How to change to the original english GUI (to see the original error messages if I want to see them)...?

First of all answering the Questions from above:
Is that that the only time?
Yes. Always I restart the system.
As in if you make a change, Tools | Options, that should write to disk immediately.
I hope so... But it didn't.
And if you look through the file (but don't modify), you can find the pref that you changed & can "see" that has in fact changed?
No.
And you've verified that everything.ini is then dated currently?
No, it isn't
And you've looked to see if you might not have various Everything.ini about?
I noticed that there is an Everything.ini in the program folder...
And that your desktop shortcut (or however you open Everything) is pointing to where you're expecting to be running Everything from?
Yes
And that your setting to save Everything.ini is as expected from within the program itself?
No.

Here how I solved the problem:

I found the Everything.ini inside the porgamm folder, which was astonishing for me...
It had an old date stamp.
First I tried to exit Everything ("E") via system-tray
Got error message which said that saving of the adjustments failed an if I want to save it in %APPDATA%\Everything.
After saying "YES" the E.ini (progam folder) was overwritten with a new date stamp and size.
Obviously E. pointed to a wrong path...
But subsequent changes of the options had no effect on this E.ini.
Now I tried exiting E. from the systemtray, it closed without a message.
But I could not restart E. anyore.
So I started the task manager and noticed 2 E.-processes, wich I killed.
After this I could start E. again

I then tried to make changes in the options and watched if these are to be found in the E.ini, but there weren't any...
Exiting E. there was a message that E. needs to be run in admin-mode or E.-service has to be installed...
I decided for E-.service..
Now I also found another E.ini in the %APPDATA%\Everything folder, which had the correct date- & time stamp and also found my changes of the options...

Now after restart of the system the option adjustments are OK and the issue seems to be solved.

But I wonder why there is an E.ini in the program folder... I'll be trying to remove it because is seems so be superfluent in this place...
I suppose there went something wrong at installation. (I uninstalled E. because it didn't work anymore properly (scanning permanently the diskdrives), after this unistall I reinstalled E. and the issues mentioned came up...)

Thanks for your help, expecting your comments.
