To clarify, I can search for GIMP, and it shows first result for "g", and the program opens just fine. Everything seems to be working as intended. However, after GIMP opens, if I then try to open an image file with GIMP, that image file won't open. This is the case for ANY program I open through Search Everything! The programs work fine, except that they can't open files. However, the programs work perfectly if I DO NOT open them through Search Everything (aka if I open them normally). Furthermore, this only happens sporadically with Search Everything every few days after a laptop restart. Unfortunately, once it happens, it never fixes itself. I can only get Search Everything to open programs that can still open files by un-installing and re-installing Search Everything. It's inconvenient having to un-install and re-install every few days though.
I have "Run as administrator" checked, and "Everything Service" checked. I'm running on Windows 10, 64-bit.

In any case, uncheck that.
That is fine, & what should work for most - unless you have some specific reason not to use it.and "Everything Service" checked
IOW, leave that checked.
(And uncheck 'Run as administrator'.)

Actually, after changing settings, I restarted my laptop. It seems like that fixed it!
