How can I tell Everything to minimized to SysTray (and not to Taskbar)?
How can I tell Everything to exit when closing window (and not minimize to SysTray)?

As far as I know,that's not possible...you can close to the tray but not minimize to the tray.
You can use Tools=>Options=>General=>UI=>Enable "Run in background" and "Show tray icon" so Everything will close to the tray and you can exit the program by using:
1.File=>Exit
2.Right click on the tray icon and choose exit
3.Set the same hotkey you use to show the window to exit the program
